Taco boats!

Just needed a quick and healthy bite to eat when a stroke of genius hit me!  TACO BOATS!

Ingredients:
  • Lettuce spears
  • Sour cream (fat free)
  • Onion, chopped and sauteed
  • Chicken breast, cooked and diced/shredded
  • Pepper jack cheese (low fat), shredded
  • Your favorite hot sauce

Recipe:

1. Place the lettuce spears on a plate and smear the bottom with sour cream


2. Add some onion


3. Add some chicken


4. Add some cheese and top with hot sauce


5. DEVOUR!!

Mix it up with your own ingredients and toppings!  Try shrimp with avocado, red onion, lime and cilantro, or ground beef with black olives, tomatoes and cheddar.

White wine and dill vinaigrette

A simple, refreshing, elegant vinaigrette. Perfect for a light salad. 

Ingredients:
2 tbs + 1 tsp white wine (sauvignon blanc)
2 tbs + 1 tsp white wine vinegar

1 tbs fresh squeezed lemon juice
1 tsp salt
1/2 tsp pepper
1 1/2 tsp dried dill
1 tsp fresh garlic, minced
1/2 cup extra virgin olive oil

Directions:

1. Combine first 7 ingredients in a small bowl.
2. Slowly drizzle in EVOO as you whisk the ingredients in the bowl.
3. Serve with your favorite salad.

Need a salad to try this out on? Here's the salad I made that inspired the vinaigrette recipe:

Ingredients:
2 handfuls of spring leaves
1 roma tomato, chopped
1/2 red pepper, chopped

1/2 small cucumber, chopped
1/2 can Alaskan salmon

Directions:

1. Combine all ingredients in a small bowl.
2. Toss salad with vinaigrette.
3. Enjoy :)
